A member of the onion family, the scallion is highly prized in cooking today as it as in Ancient times. To the Ancient Egyptians, the onion represented all the layers of the universe. Onions were presented to the gods as sacrificial offerings and leaders took their oath on an onion as we would a Bible. "Chicago" is an Indian word for wild onion.
